Mozambique: Kulungwana takes Cantate Project to Niassa province

For the first time, Azgo, Mozambique’s most prestigious music and arts festival, will host a gastronomic fair. The event, on the second day of the fair, will provide a leisure space where visitors can experience a gastronomic journey using local elements.
A camping zone will also be one of the attractions of the party, which this time leaves the heart of Maputo to explore Marracuene.
Taking place at the Cumbeza Cultural and Multidisciplinary Centre in Marracuene, the gastronomic fair is scheduled for Africa Day, celebrated on the 25th of May. The dishes and cocktails will reflect the cultural diversity and rich history of the continent, as well as its contribution to the world of gastronomy.
Food and drink based on genuinely African ingredients are a vibrant expression of the identity and heritage of the people of each region. From the intense and spicy flavours of North Africa to the exotic and colourful delights of the south, African cuisine is a tapestry of unique aromas, textures and flavours.
African-inspired cocktails are, at the same time, a celebration of the continent’s creativity and abundance of natural resources. African bartenders elevate local flavours to new heights, creating unforgettable sensory experiences.
Carlos Matecane and Justino Zavale, winners of the third and fourth editions of the Diageo Moçambique Bartender Competition respectively, are among the bartenders who will be at the event. The two professionals have the task of producing recipes based on traditional ingredients such as malambe, maçanica, mapflilua, piri-piri, among others.
Each cocktail will be accompanied by a local dish. While the bartenders make their mixes, Chef Couto will harmonise them with a culinary experience inspired by Mozambican ingredients, with dishes such as mucapata, xima and cassava, just to name a few.
Dubbed “Johnnie Walker Africa Day”, the rotating space will allow Azgo Festival participants to experience the rich Mozambican cuisine in an “iron and fire” environment composed of a meat grill with fire and “mbenga” elements, as well as wood and bricks painted yellow.
